I had some veggies in the fridge from the other day.
I had water sautéed onions, carrots, green beans, zucchini and red pepper that I used for dinner the other night.
I saw some leftover rice in the fridge.
Hmmmmm…..I threw the veggies and rice in the pan….added a little bit of water so that it wouldn’t stick.
I added a splash of soy sauce (or tamari for gluten-free) and then I added 2 -3 teaspoons of natural sugar-free peanut butter.
Heated that up together.
Plated it and added cilantro and lunch was served.
Super easy and for me…yummy!!!!
